Ingredients for potato soup
- 1 kg of potatoes
- 2 small onions
- 3 carrots
- 1 thick slice of celeriac
- 3 tablespoons oil
- 1 liter of vegetable broth
- salt, pepper, paprika
- 1 tbsp parsley (frozen)
- 6 sausages

#This is how potato soup is made:
1. Chop the onions, carrots and celery. Peel and finely chop the potatoes.
2. Heat two tablespoons of oil in a large saucepan and sauté the onions.
3. Add potatoes, carrots and celery and simmer briefly.
4. Deglaze with the vegetable broth and simmer for half an hour.
5. Meanwhile, slice the Vienna sausages and brown them in a pan with the remaining oil.
6. Mash the cooked soup with the potato masher. This way there are still small bits left in the consistency. If you like it even thinner, use the magic stick to puree.
7. Season the soup with salt, pepper and paprika, add parsley and sausages.

What meat insert for potato soup?
It doesn’t always have to be Wiener sausages that end up as the meat ingredient in potato soup. The sausages are also excellent. Another alternative: bacon or Kassler cubes. With the latter, the soup only needs to be seasoned after the meat has been added, as bacon and smoked pork are often naturally salty.

How long does potato soup keep?
Potato soup is great for meal prep because it usually tastes best when reheated. It will keep in the refrigerator for three to four days. You can also freeze the potato soup, so it can be enjoyed for up to six months. Tip: Let potato soup cool completely in an uncovered container before refrigerating. When freezing, you need to be sure to fill the soup in portions.
