Not just a fad: our ancestors already knew how healthy homemade vegetable soups are for body and soul. The most important ingredients, fresh broccoli and savoy cabbage, are local superfoods. They boost the metabolism and therefore the burning of fat!

So easy and so incredibly delicious! Thanks to many valuable plant substances, the vegan detox soup really stimulates our metabolism and thus helps to detoxify the body and increase our long-term well-being.

Ingredients for 4 persons :

  • 600g broccoli
  • 750g savoy cabbage
  • 2 carrots
  • 4 stalks of celery
  • 4 garlic cloves
  • 1 onion
  • 2 parsnips
  • 1 teaspoon olive oil
  • 500ml hot vegetable stock
  • 1 lemon, freshly squeezed
  • Basil, 2 stems
  • salt

Approximately per serving:

  • 397 calories
  • 9 grams of fat
  • 47 grams of carbs
  • 21 grams of protein

And here’s how it’s done:

  1. Clean about 100 grams of broccoli florets and set aside. Wash the remaining vegetables and cut them into small pieces.
  2. Heat the oil in a large saucepan. Add chopped vegetables and sauté lightly for five minutes.
  3. Add hot vegetable broth and lemon juice. Bring to a boil, reduce the heat and simmer for about 20 minutes.
  4. Blanch the broccoli florets in salted boiling water for two minutes. Drain and reserve.
  5. Add the basil to the soup and purée everything with a hand blender. Ladle the soup into decorative plates or bowls and arrange with the blanched broccoli and serve. Enjoy your lunch!
