Fast and healthy Vegetarian cauliflower and leek soup

A spoonful of happiness: the creamy cauliflower and leek soup warms you from the inside and is wonderfully simple. They can be prepared in bulk, frozen, reheated and enjoyed again.
Soups are powerful foods for body and soul: our vegetarian cauliflower and leek soup warms you from the inside and makes you feel good. After enjoying it, you feel like purring like a happy cat and getting cozy on the couch.
Ingredients for 4 servings:
2 shallots
1 potato, large and floury
100g celeriac
1 leek
400 grams of cauliflower
2 tablespoons of butter
600ml hot vegetable stock
3 tablespoons lemon juice
4 sprigs of parsley
100ml cream
salt
White pepper
Nutmeg, freshly grated
4 slices of white bread, toasted
Approximately per serving:
660 calories
40 grams of fat
40 grams of carbohydrates
17.5 grams of protein
Preparation time:
about 20 minutes (plus 20 minutes of cooking)
And here’s how it’s done:
Peel and finely chop the shallots, potato and celery. Clean the leek and cut the white lower part into rings.
Wash and trim the cauliflower and keep the stem. Divide the cauliflower into small florets and cut the stem into small pieces.
Heat the butter in a large saucepan. Sweat the shallots, potato, leek and celery until translucent. Add the cauliflower, stir briefly and top up with the hot broth. Add the lemon juice and simmer gently in the closed pan for 15 minutes at low temperature. Meanwhile, finely chop the parsley.
When the vegetables are tender, add the cream to the soup and blend everything in a blender. The soup should be nice and creamy. Season with salt, pepper and nutmeg.
Toast the white bread and meanwhile arrange the soup on beautiful decorative plates and garnish with parsley. Serve with white bread and savor the happiness of the soup spoon by spoon.
