Preparation time:

  • 30 minutes (plus 12 hours rest and 1 hour cook)

And here’s how it’s done:

  1. Soak the split peas in cold water overnight. Drain, rinse with water and drain the next day. Peel and finely chop the onions and garlic. Peel, wash and cut the carrots, parsley roots and potatoes into pieces.
  2. Cut the bacon into small cubes. Heat the oil in a large saucepan and sauté the onions with the bacon for about five minutes until light. Add the peas, remaining vegetables and garlic, simmer briefly, then pour in the broth.
  3. Mix the marjoram and cumin, add half with the bay leaf, salt and pepper everything and simmer, half covered, for about 30 minutes over low heat. If necessary, skin the sausage, cut it into slices and simmer for 20-30 minutes.
  4. Add the cream and bring everything to a boil again. Season the finished soup to taste, divide into bowls or plates, sprinkle with parsley and a little marjoram-cumin mixture and serve.
