Casserole of hacked noodles with feta – the recipe
What do you need:
1 onion, 2 cloves of garlic, 2 to 3 tablespoons of olive oil, 500 grams of mixed mince, 1 tablespoon of tomato puree, salt, pepper, cinnamon, cayenne pepper, sweet paprika, 1 tablespoon of dried thyme, 1 can (425 ml) of crushed tomatoes, 3 tablespoons of powdered vegetable stock, 100 milliliters of milk, 2 tablespoons of fresh cream, 250 grams of Greek pasta (Kritharaki, you will find it in Turkish shops or in some supermarkets; if necessary, you can of course also use “normal” pasta), 2 sprigs of thyme, 250 grams of feta cheese

Here’s how it’s done:
First, let the oven preheat to 175 degrees (top and bottom heat) or 150 degrees (convection).
Next, peel the onion and garlic and cut them into thin cubes.
Heat the oil in a roasting pan, crumble the minced meat in it and brown it, turning it regularly. Break up the meat well. Then add the onion, garlic and thyme and sauté briefly. Then add the tomato puree and sauté briefly. Now season everything with salt, pepper, cinnamon, cayenne pepper and paprika.
Dissolve the vegetable stock powder in 700 milliliters of hot water. Then deglaze the minced meat with the tomatoes in the broth. Let everything boil gently. Then add the milk and cream and mix well.
Add raw noodles and mix well. Then pour everything into a baking dish and crumble the cheese on top.
Now put the casserole in the preheated oven and cook for about 30 minutes.
Meanwhile, wash the thyme and drain it. Roughly tear off the leaves from the stems.
Remove from the oven, drizzle with a teaspoon of olive oil and sprinkle with thyme.
