Editor’s Favorite Aromatic: couscous soup with courgettes and tomatoes

Fruity: The vegetarian couscous soup with zucchini and tomatoes makes us happy every time. After a long day, it’s perfect for a culinary trip down south.
Happy with a spoon: The wonderful couscous soup with zucchini and tomatoes is quick and easy to prepare, has a pleasant spiciness and seduces with a wealth of flavors.
Ingredients for 4 servings:
800ml vegetable stock
500g ripe or tinned tomatoes
1 red pepper
1 onion
1 clove of garlic
1 red pepper
1 zucchini
2 tablespoons oil
150 grams of couscous
Salt pepper
basil
Parmesan cheese, fresh and grated (optional)
Approximately per serving:
230 calories
6 grams of fat
35 grams of carbohydrates
6 grams of protein
Preparation time:
10 minutes (plus 20 minutes of cooking)
And here’s how it’s done:
Boil the vegetable broth in a saucepan. Heat about a liter of water in a kettle.
Boil the fresh tomatoes with the water from the kettle, rinse, peel and chop finely.
Wash the chilli, dry it and cut it into coarser strips. Peel the onion and garlic, cut them into thin slices. Wash the peppers, cut them in half, deseed them and cut them into small pieces. Wash the courgettes, cut off the ends, cut them in half lengthwise and cut them into rings.
Heat the oil in a saucepan, sauté the chilli, onion and garlic over medium heat until translucent. Add broth and tomatoes. Bring to a boil and simmer over medium heat for about ten minutes. Add peppers and zucchini. After five minutes, stir in the couscous. Season the soup with salt and pepper and serve garnished with basil. If desired, you can grate fresh Parmesan over the tomato soup. Taste the plate of happiness!
Point Without parmesan, the couscous soup is also suitable for people who eat vegan.
